Put all the ingredients below in the Cuisinart and pulse it all together.
1/2 c organic almond butter
1/2 c organic dates (pitted)
2/3 c organic shredded coconut
2 pinches Himalayan sea salt
2 TBS chia seeds
1 TBS organic wildflower honey (optional)
And the SECRET INGREDIENT! 20 drops (about 1/4 tsp) Wild Orange Oil (not orange extract)
Wild Orange Oil, which comes from the oily spritz in the skin of the orange, besides being incredibly delicious, is also high in antioxidants, is a natural mood elevator, and boosts the body’s immune system. My takeaway from all the pre-med training I did over the past two years is that food and meditation are both great preventive medicine, so I try to creating recipes that are delicious and good for us, too!
Back to the recipe, after everything is pulsed together, form into little balls and then roll them in another 1/3 c shredded coconut. If you can let them set for a few hours in the fridge, they’ll consolidate and be even richer and more delicious once all the flavors have had a chance to meld, and the chia absorbs the orange oil and swells.
